Postharvest Management of Vegetable Crops
India is the world’s second largest producer of fruits and vegetables, however, in
comparison to developed countries, fewer than 2% of fruits and vegetables are
processes. Food is one of the most basic need for survival. Since, the pre-historic
times people have been knowledge of processing and preserving food. Recent,
improvements have been aimed at being both cost effective and practically possible.
Post harvest Technology is an essential branch of agriculture and its importance
grows in the field of horticulture because horticultural crops are highly perishable in
nature. Although, Post harvest technology has been used throughout the world from
time immemorial, the business in India is still infancy.
The book is intended for students studying in horticulture science. This book is
written in light of the current situation. We have taken every effort to describe
each and every Post harvest technology topic as accurately as possible. Efforts
have been made to present each chapter in a lucid style for quick and effortless
understanding. This edition of the book consists of a theory portion comprising nine
(9) chapters covering UGC approved new syllabus of CBCS followed by different
